This recipe needs to be started the night before you plan to eat them.  In a big bowl, stir together:

1/2 C lukewarm water
1 Tbsp honey
2-1/2 tsp yeast

Let sit for 10 minutes; the yeast will start bubbling/foaming.  To the yeast mixture, add:

1-1/2 C water
1 tsp salt
2 C flour
1/2 C oil

Beat until smooth. Wrap bowl tightly with plastic wrap and let stand overnight on the countertop. Do not refrigerate.
At mealtime, beat in:

2 eggs
2 tsp vanilla
1/4 tsp baking soda

When batter is smooth, bake on waffle iron.

We prefer fruit (not syrup) on our waffles & pancakes.  Applesauce is easy to do, but peach sauce and homemade cranberry sauce are our favorites.
