Oat Bread

This is a sweet bread that contains no wheat.

Dry ingredients:

  • 4 C oats
  • 2 tsp guar gum
  • 3/4 tsp salt
  • 2 tsp yeast

Wet ingredients:

  • 1/4 C oil
  • 3/4 C honey
  • 1-1/3 C water

Powder the oats in a food processor or blender (for a more expensive, more finely-textured bread, you could buy oat flour instead).  Thoroughly mix dry ingredients, being sure that no clumps of guar gum exist.  Add wet ingredients and mix well.  I use either an automatic bread machine, a dough hook on my stand-mixer, or a dough thrower.  If using a dough thrower or mixer, it will take 10-15 minutes to thoroughly work the dough.  Let rise for one hour.  Grease two loaf pans, divide dough between pans, and bake at 350 degrees for one hour.
