To minimize the number of dirty dishes, I measure & mix this in my 8-cup measuring cup then pour the batter straight onto the griddle. Pour juice into measuring cup up to the 2-cup line. Add cooking oil equal to 1/4 cup (precision is not necessary, just get close). Add remaining ingredients and mix well.
Bake on hot griddle. Hotcakes are ready to flip when there are little holes all over the top.
These can be made with wheat flour instead of gluten-free, if desired.
