Chicken Casserole

This incredibly easy meal is one of my kids’ favorites.  When I cook ten pounds of orange chicken, the leftovers (planned overs?) go into this casserole.

Place 1-1/2 cups rice and 3 cups water in a rice cooker (or in a pot on the stove, if you prefer to cook rice on the stovetop).

While rice is cooking, remove chicken meat from bones.  Place some of the leftover orange broth in a large saucepan and heat until melted.  Thicken this broth and add the chicken meat.  Stir all into cooked rice.
