Applesauce Meatloaf

3 pounds ground beef
1/2 quart applesauce
2 C rolled oats
2 duck eggs OR flax seed egg substitute*
3 tsp salt
1 tsp dry mustard
1/2 tsp dried sage

Place all ingredients in a large bowl and mix thoroughly.  When combined, press into a loaf pan and spread another 1/2 quart of applesauce over the top.   Bake at 375* for 90 minutes.

Easy to serve with baked potatoes (they go in the same oven, so are easy to cook) and a green salad.


*Powder 1 cup flax seeds in a blender or food processor.  While appliance is running, drizzle in 3 cups water.  The resulting mixture will be light and frothy, and can sometimes be used as egg replacer in recipes.  It works in this one.
