First hash I tried. It’s quite different than my standard breakfast, but delicious. Once I’m eating eggs again, I can’t wait to try it with a fried egg on top.
- 3 pounds sweet potatoes
- 3 tsp minced garlic (6 cloves)
- 3 C sliced celery
- 1-1/2 pounds pork
- 1-1/2 tsp salt
- 2 tsp fresh sage (or 3/4 tsp dried)
- 3/4 tsp fresh thyme (or 1/4 tsp dried)
- 1/4 tsp ginger
- 1-1/2 pounds spinach
Peel and cube the sweet potatoes. You should have 9 cups of cubes. Mince the garlic. Slice the celery. Powder herbs all together.
Heat a skillet and brown the pork. Set pork aside, leaving fat in the pan.
Add minced garlic to the pan and cook about one minute, then add the sweet potato to the skillet and stir. Cook about 4-5 minutes, then add celery and cook another 4-5 minutes.
Add pork back into the skillet, along with the powdered/mixed herbs and the salt. Cook, stirring often, about 2 minutes.
Add the spinach and cook another 2-3 minutes. Serve.
Makes 8 servings. Each serving contains approximately 405 calories, 19g protein, 34g carb. Glycemic load = 10
