2 cups rolled oats, uncooked
½ tsp baking soda
¼ tsp salt
½ cup applesauce
½ cup honey
¼ cup raisins, optional
Powder oats in a blender or food processor. Mix with remaining ingredients. Drop heaping spoonfuls onto an ungreased cookie sheet and bake at 375° F for 9-10 minutes. Remove to cooling rack. Makes 2 dozen.

Yes, I like them very much. My kids do, too. They can get dry, so make sure they don’t cook too long. They taste a little like apple crisp.
I was craving something baked with pecans this afternoon, so I added pecans and cinnamon to this recipe and otherwise cooked it exactly as printed. Thanks for the great afternoon snack!

The pecans sound yummy! I’ll have to try that variation. I was also thinking that dates would be good in these cookies.
I made these into pumpkin cookies by substituting pumpkin for the applesauce and glazing the top. Stir together equal amounts of pumpkin and honey for the glaze.
