We like to saute’ zucchini for breakfast – with or without scrambled egg poured into the pan, with or without garlic. Chunks of zucchini can be added to soup. Zucchini can be hollowed out and filled with meatloaf.
Another quick and easy zucchini recipe:

Slice zucchini lengthwise, approximately 1/4″ thick.
If desired, marinate in Italian dressing.
Cook over barbecue briquettes or propane/electric grill.
