Italian Almond Cream & A Few Links

It’s my birthday.  I have no desire to prolong this flare, so am skipping the cake.  Here’s a recipe for my favorite dessert:

1 quart heavy cream
2 envelopes Knox unflavored gelatin
1-1/3 cup water, divided
16 packets sugar substitute
1 tsp almond extract

Sprinkle gelatin over 1/3 cup cold water. Set aside.  In large microwave dish, combine remaining ingredients.  Heat to boiling.  Remove from microwave and add gelatin mixture; stir well.  Pour into cute mold-dish if desired.  Refrigerate until set.
